Postharvest loss, food safety and decrease in quality are the main concerns in the fruits and vegetables supply chain. To that end, improved understanding of postharvest physiology, pathology, biochemistry and microbiology have been achieved to control the quality and safety of fruits and vegetables during distribution.

This special issue invites authors to submit high-quality and original research or reviews in the innovative technology applications in the field for publication.
